FROM NOVARES TO VCO: A TERRITORY TO TASTE.
Products of excellence
In our territory there is a truly enviable variety of products, such as to attract tourists who are passionate about good food and the genuine flavors of these lands.
In the Novara plain we find RICE grown in many varieties: Carnaroli, Arborio, Roma, Baldo, Vialone Nero and the historic Razza 77.
One of the most loved rice dishes in the Novara area is PANISCIA , a risotto enriched with vegetables from the garden, salam d'la duja
(typical salami matured in fat in an earthenware container).
In the territory of the Ossola mountains we point out the GNOCCHI ALL'OSSOLANA , made with potatoes, chestnut flour and pumpkin, seasoned with butter cream or melted cheese.
Among the cured meats from Ossola , the following stand out: FLAVORED LARD with alpine herbs, VIGEZZO CURED HAM, BRISAULA FROM THE OSSOLA VALLEY and VIOLINO DI CAPRA.
The Novarese area is also a center of excellence for the production of GORGONZOLA DOP (the namesake consortium is based in Novara).
In the Ossola valleys, on the other hand, we find OSSOLANO DOP and BETTELMAT PAT , made in just seven mountain pastures in the Antigorio - Formazza valleys, only here is there a very rare herb, called "mottolina", capable of giving the milk a particular aroma.
Also try the TOMA DEL MOTTARONE , coming from the mountain between Lake Maggiore and Orta.
The typical product of the lake area is FRESHWATER FISH : trout, perch, whitefish, pike perch, char and bleak.
PERISCO stands out particularly, as its small fillets can accompany risottos, be served soused or fried with butter and sage.
Our whole territory also offers a great variety of desserts: the BISCOTTINI DI NOVARA , created by the nuns in the convents in the 16th century, the BREAD OF SAN GAUDENZIO, the BRUTTI BUT BUONI di BORGOMANERO.
On the lakes we find MARGHERITINE DI STRESA (tasty simple shortcrust pastry), IMPERIALINE AND REGINETTE DI OMEGNA.
The BREAD AND MILK CAKE is instead the typical mountain cake, made with milk and stale bread, cocoa and raisins, cooked in a terracotta pan.
To accompany the gastronomy part there are highly prized wines. In Ghemme there are many cellars where you can find the noble DOCG GHEMME, DOC Boca, Fara and Sizzano and the ERBALUCE
